Mascarpone is an essential ingredient in a number of applications in the food industry like desserts, cakes, and other food preparations.
Compagnia Lattiero Casearia (CLC) produces mascarpone by combining state-of-the-art technology and a strict respect for Italian tradition, making use of a modern and highly efficient production facility.
CLC mascarpone is made from selected fresh cream and citric or lactic acid, with a customizable fat content ranging from 35% to 45%, to meet specific needs of our customers.
The product is available in packages for both retail market and food industry:
· HO.RE.CA. : 250 g and 500 g packages.
· Industrial: 10 kg and 20 kg containers.
CLC also offers the option of private label production to meet specific customization requests.

Selection of raw materials

Heat treatment
To preserve organoleptic qualities the cream is subjected to high temperatures.
Acidification
The addition of citric or lactic acid causes the cream to coagulate, giving mascarpone its characteristic creamy texture.
Packaging and rapid cooling
After coagulation, mascarpone is packaged and rapidly cooled down to about 4°C to stabilize structure and ensure preservation.
